Vegan Sweet Chili Twist Bread

Ingredients
  

For the Bread⠀

  • 1 cup lukewarm water ⠀
  • 3/4 tbsp active dry yeast⠀
  • 1 tbsp olive oil⠀
  • 2 & 1/4 cups all purpose flour or bread flour ⠀
  • 1 tsp salt⠀
  • pinch of sugar ⠀

For the Sweet Chili ⠀

  • 1/3 cup rice vinegar⠀
  • 2 tsp dried red chili flakes ⠀
  • 1/3 cup water⠀
  • 1/3 cup + 2 tablespoons cane sugar⠀
  • 1 tbsp rice wine or white vinegar ⠀
  • 1.5 tsp garlic finely minced⠀
  • 1 tsp ginger finely minced⠀
  • 1 tsp soy sauce ⠀
  • 2 tsp cornstarch dissolved in 1 tbsp water ⠀

For Brushing ⠀

  • 1/2 cup @eatjust or aquafaba ⠀

Instructions
 

For the Bread

  • In a bowl add warm water then add yeast and sugar, let sit for 5 minutes, then stir to combine.
  • Next, in another bowl add the olive oil, flour and salt to a bowl then pour in the yeast mixture and mix with a fork mix until fully incorporated.
  • On a lightly floured surface remove dough from the bowl and knead until dough is smooth and elastic approximately 10 minutes (if dough is really sticky add a little extra flour).⠀
  • Then place in a lightly oiled bowl and cover with plastic wrap and a large clean kitchen towel for 1-2 hours until doubled in size.⠀

For the Sauce

  • Place all of the ingredients except for the cornstarch mixture in a small saucepan and bring it to a boil, stirring regularly. Once the sugar is dissolved, stir in the cornstarch mixture, stirring continually until thickened, about 1 minute. Set aside.⠀
  • Meanwhile, preheat oven to 350F.
  • Once dough is ready punch down and place onto a lightly-floured board.
  • Next, divide dough into 2 equal pieces. Then roll each piece into a flat strip about 10 inches long.
  • Spread sweet chili onto each strip then roll into a cylinder until chili is enclosed inside.
  • Then twist each strip around each other and press each end to seal.
  • Place onto a baking tray lined with parchment paper and brush on the @eatjust, then loosely cover with tinfoil and bake for 30 mins.
  • Lastly, after 30 mins, remove from oven and remove tinfoil, brush again with @eatjust and put back into the oven for another 30mins until golden brown. ⠀
