This Vegan Pizza with Zucchini, Tomatoes, Serrano Pepper is topped with Guacamole & Fresh Cilantro to send your taste buds into a tizzy! It bursts with flavor that warm the heart like a crackling fire on a winter's night. The delightful zucchini base may come as a surprise, but once you've polished off a few slices, it'll be a surprise you can't get enough of!

Ingredients
  

For the Pizza Dough ⠀

  • 2 cups lukewarm water ⠀
  • 1.5 tbsp active dry yeast⠀
  • 2 tbsp olive oil⠀
  • 5.25 cups all purpose flour or bread flour ⠀
  • 1.5 tsp salt⠀
  • pinch of sugar ⠀

For the Toppings

  • 5 zucchini roughly chopped ⠀
  • 2 cups cherry tomatoes ⠀
  • 4 cloves garlic minced ⠀
  • 2 serrano peppers minced ⠀
  • olive oil⠀
  • salt & pepper to taste ⠀

For the Guacamole⠀

  • 5 avocados ⠀
  • 1/2 onion diced ⠀
  • 2 garlic cloves minced ⠀
  • 1/2 cup cherry tomatoes sliced
  • 1 tbsp ginger minced
  • 2 lemons juiced
  • 1 bunch cilantro chopped
  • salt & pepper to taste ⠀

Toppings⠀

  • 1 bunch cilantro ⠀
  • 1/2 cup cherry tomatoes sliced

Instructions
 

  • In a bowl add warm water, yeast & sugar. Stir to combine & let sit for 5 mins.
  • In another bowl, add the olive oil, flour & salt then pour in the yeast mixture, mix with a fork until fully incorporated.
  • On a lightly floured surface remove dough from the bowl and knead until dough is smooth and elastic.
  • Next, place in a lightly oiled bowl & cover with plastic wrap & a kitchen towel for 1-2 hours until doubled in size.
  • Preheat the oven to 450F. Place zucchini in large bowl over paper towels,add a pinch of salt to soak up the moisture.
  • Now, In a large deep pan or dutch oven, heat the serrano peppers & garlic over medium heat for 1 min, remove from heat and place on a paper towel.
  • Next, add in the zucchini and cook over medium-high heat until softened (about 15 minutes) next add in the cherry tomatoes and cook for 5 minutes.
  • Add back in the garlic and serrano peppers, using a potato masher mash all the ingredients together until soft, similar to that of a chunky paste.
  • Roll out dough into a pizza shape and spread the toppings from the pan over the base. Season with salt & pepper.
  • Bake in the oven for 15-20 minutes until crust is golden brown.
  • Meanwhile, add the avocado, lemon, ginger and a generous amount of salt & pepper to a bowl, mash with a fork until smooth, next add in the rest of the guacamole ingredients and mix until incorporated.
  • Once the pizza is ready, top with guacamole, fresh cilantro & fresh cherry tomatoes. Enjoy!
