Vegan Creamy Lemon Pasta

  • 200 g pasta
  • 3 tbsp vegan butter I used @earthbalance⠀
  • 1 lemon ⠀
  • 1/2 cup vegan parmesan grated - I used @violife_foods⠀
  • 3/4 cup unsweetened coconut cream refrigerate overnight and scoop out hardened cream, discard liquid ⠀
  • 4 cloves garlic minced ⠀
  • salt & pepper to taste


  • First, cook pasta in heavily salted, boiling water as per package instructions.
  • Meanwhile, melt butter over medium heat, add minced garlic and cook until fragrant.
  • Now add lemon juice and grate vegan parmesan in.
  • Next, gently whisk coconut cream with half a cup of pasta water until smooth and creamy, then add to the pan.
  • Add pasta directly into pan with 1/2 cup of pasta water and cook until sauce is reduced and creamy.
  • Lastly, Season with salt and pepper and... Enjoy 😉
