  • Deep Pan


  • 1 medium yellow onion⠀
  • 6 cloves garlic ⠀
  • 1 tsp salt⠀
  • 1 tsp red pepper ⠀ crushed
  • 1.5 tbsp extra-virgin olive oil ⠀
  • 14 oz tomato paste ⠀
  • 1 tsp black peppercorns⠀ crushed
  • 1 oz vodka⠀
  • 1/2 cup fresh basil leaves optional⠀
  • 1 tbsp cashew cheeze I used @uprisefoods nooch it
  • 3/4 cup coconut cream make sure to carefully scoop out of can so as not to use the liquid
  • 226 grams rigatoni


  • First, Fill pasta pot with heavily salted water and bring to a boil, add in pasta while preparing other ingredients.
  • Now dice the onion and mince the garlic.
  • Next, heat olive oil in deep pan, add in the onion and garlic and stir until onion turns translucent and golden.⠀
  • Then add tomato paste and red pepper, stir in covering onions. Cook until paste turns from red to brown.⠀
  • Add the vodka slowly and incorporate fully, reduce to a low heat to simmer.
  • Next, carefully scoop out 1/4 cup of pasta water, then add ¾ cup of coconut cream and mix in a measuring cup to make a creamy sauce.⠀
  • Now slowly add to pan until blended.
  • After that, transfer cooked rigatoni straight from pot into the deep pan, add 1/2 cup of pasta water slowly incorporating whilst keeping a smooth and glossy consistency (make sure to add slowly so as not to make the sauce watery).
  • Now season with salt and transfer to plates.
  • Finally, top with cashew cheeze, crushed red pepper, crushed black peppercorns and fresh basil.
