Ingredients
  

  • 1 pack gluten-free cauliflower gnocchi I used @wholefoods⠀
  • 6 garlic cloves ⠀
  • 3 tbsp vegan butter ⠀
  • 1/2 cup chopped walnuts ⠀
  • 1 cup baby spinach⠀
  • 1 cup unsweetened plant milk I used soy⠀
  • 1/2 cup vegan cream cheese I used @violife_foods⠀
  • 1.5 tbsp white truffle oil ⠀
  • 2 tbsp olive oil ⠀
  • salt + pepper

Instructions
 

  • Melt butter in a large skillet over medium heat until slightly browned.
  • Add garlic and cook until fragrant. Then remove garlic from pan and place onto a paper towel.
  • Add walnuts, plant milk, cream cheese, truffle oil and stir until blended.
  • Next, add in gnocchi and sear each side on medium for 1-2 minutes until golden brown.
  • Add in spinach, salt and pepper and cover for two minutes until spinach wilts.
  • Serve immediately and... Enjoy!
