A refreshing array of colorful ingredients to satisfy even the fussiest of palates! Best for days when you need something healthy but don't want to skimp on taste. Chickpeas tossed with corn, mango, and cilantro, drizzled with fresh lime juice, olive oil, and maple syrup is what makes this simple yet oh so delcious. This is a great bowl to whip up for lunch - or for your next weekend dinner party to start off the entrees!

  • 1 cup corn cornels
  • 1 cup mango⠀ diced
  • 1 can chickpeas rinsed
  • 1 cup cilantro 
  • 1 red onion thinly sliced 
  • 1 Serrano chili  diced
  • 1 capsicum  thinly sliced 
  • 1/4 cup green onion thinly sliced 
  • 1/3 cup lime juice 
  • 1/4 cup olive oil
  • 2 tsp pure dark brown maple syrup
  • 1 tsp red pepper flakes 
  • salt and pepper


  • Add all vegetable and fruit ingredients to two serving bowls. 
  • In a separate bowl mix the olive oil, lime juice and maple syrup to combine.
