Ingredients
  

  • 200 g  farfalle pasta
  • 1 pinch  saffron threads
  • 4 tbsp vegan butter I used @earthbalance
  • 1.2 cup white wine
  • 1 tbsp red pepper flakes
  • 1.4 cup cup unsweetened coconut cream 
  • salt + pepper to taste

Instructions
 

  • Bring heavily salted water to a boil in a deep pot and add pasta as per packet instructions.
  • Meanwhile, place saffron threads and 1/4 cup hot water in a bowl to rest for 10 mins.
  • Simmer white wine in a large pan for 5-7 minutes over medium heat until slightly reduced.
  • Add in 3 tbsp of butter gradually and stir until bubbling.
  • Next, whisk the coconut cream with 1/4 cup of water in a measuring cup until even and smooth. Then into the pan with the saffron water.
  • Season with salt and pepper and cook until sauce has thickened then add the pasta straight from the pot with 1 more tbsp of butter.
  • Stir until evenly coated.
