Ingredients
  

  • 10 minced  @datesaregreat
  • 2 cups Lentils soaked for 15 minutes in 400ml of coconut milk⠀⠀
  • 1 tbsp Fresh ginger, peeled and chopped
  • 2 tbsp curry powder
  • 2 tbsp ground cumin
  • 2 tbsp ground turmeric
  • 2 tbsp garam masala
  • 4 Chilies, stemmed and seeded
  • 3 Large onions thinly sliced
  • 5 Garlic cloves
  • 1 cup Beer⠀⠀
  • 1.2 tbsp Coconut sugar
  • 1 can Diced tomatoes

Instructions
 

  • Rinse and drain lentils then add to a slow cooker.
  • Add in the sugar, garam masala, turmeric, cumin, curry powder, ginger, garlic, 1 onion, and serrano chilies into a food processor or blender and blend until mixture becomes a paste.
  • Add mixture into the slow cooker and stir in tomatoes and 6 cups of water.
  • Cover slow cooker and cook on low for 8 hours.
  • Season with salt and add coconut milk then stir well.
  • Once curry is half an hour from cooked add two of the thinly sliced onions, dates and beer to an oiled pan.
  • Let cook on medium heat for 20 minutes stirring occasionally until beer has completely reduced.
  • Assemble curry, your favorite rice to a bowl then top with caramelized onions and dates.⠀⠀
